Straight Squashin’ it
I love Fall for the veggies alone! Not kidding. I don't like the idea of it getting cold but I do love Squash, pumpkins, apples and all the other glorious Fall Veggies.
My Fav is Butternut Squash, it is a great source of vitamin A and C, and also contains significant quantities of potassium, iron, magnesium and beta carotene!
Any of the squash family can be used for "Pasta" substitutes but the butternut flavor is just to killer to not use as a spaghetti. Use a sprializer and make lovely little strings of butternut pasta and now decide what you want for a sauce. A creamy yummy choice I go with this is raw tahini or pumpkin seed butter, olive oil, smoked Yakima sea salt and a little of our Anti Plague for spice. Add any extra veggies if you want to really make it a meal. Dehydrate the seeds for a crunchy topping!
