I get bored of my usual drinks and can't stop the watermelon train once it hits the well seasonal station! So Let's mix it up shall we?
From Judita Wignall's Raw and Simple Cookbook
4 cups cubed watermelon
1 cup chopped fennel, white bulb only
1/3 cup loosely packed fresh mint
6 Ice cubes
Sweeten to taste if needed
Place all indredients in a blender and process till frothy. Serve immediately.
*Health note watermelons contain more lycopene than tomatoes. They are also an excellent source of vitamin Ca nd beta carotene and can help improve kidney function!
